Student Spotlight: Jo Pearson

As part of the IINH Student Spotlight series, we will be visiting some of our alumni from both our Nutrition & Health Coaching and Nutritional Therapy courses to see what sparked their interest in nutrition, discuss their nutrition philosophies and find out what they’ve been up to since studying with IINH.

Jo Pearson is a Health Coach and Founder of the Wellness Equation, bringing together her background in Medical Microbiology, teaching, student welfare and nutrition. She specialises in group and individual coaching, helping clients navigate digestive health, sleep, and sustainable wellness transformations.

ABOUT Jo Pearson

My name is Jo Pearson and I’m a Health Coach and Founder of the Wellness Equation. After 20 years as a Biology teacher, I discovered that health coaching allowed me to bring together my love of bioscience, education, and wellness transformation in a way I’d always hoped for. What excites me most is witnessing how simple, personalised dietary changes can free people from digestive issues they thought they’d have to live with forever. That moment when someone goes from feeling stuck to empowered—that’s what drives my work.

 

What inspired you to pursue a career in Nutrition & Health Coaching or Nutritional Therapy?

 

My undergraduate degree was in Medical Microbiology and this led me to a career as a Biology teacher for over 20 years, alongside a dedicated role in student welfare. Health, fitness, and cooking fresh, nutritious meals for my family have always been personal passions. I often wondered if there was a way to integrate my love of bioscience, my experience in education and wellness transformation, and my desire to help others lead healthier, more balanced lives. I discovered there was, and health coaching turned out to be the perfect fit.

 

Can you describe a memorable experience or achievement since graduating?

 

During my training, I initiated a pilot group coaching programme with colleagues at the school where I worked, encouraging them to use the summer holidays as a springboard for wellness transformation. The success of that programme inspired me to formalise and expand the offering, and I now run group coaching for teachers both online and in person. The first programme is designed as a wellness boost to help teachers navigate the demands of a new school year. I love the energy of group coaching and have seen how peer learning, accountability, and shared support can create a powerful and uplifting dynamic. The group morale is truly infectious!

 

How has your training influenced your approach to health and wellness?

 

My training gave me a valuable reason to carve out time in my busy life to explore aspects of health that have always fascinated me. It deepened my understanding and appreciation of key wellness foundations—particularly the transformative impact of fibre and quality sleep, which I’ve experienced first-hand. This personal journey has shaped my coaching approach, making it both evidence-based and empathetic.

 

How have you seen your work positively impact others?

 

I’ve seen my work make a real difference for individual clients across a wide range of issues, from pelvic floor health and prolapse recovery to reducing dependency on sleeping pills. Even smaller but meaningful wins, like helping someone re-establish a sustainable exercise routine or fit back into clothes they hadn’t worn in years, have had a powerful ripple effect on confidence and wellbeing. It’s incredibly rewarding to witness these transformations and know that the support I offer is helping people reclaim their health.

In a group coaching context, I’ve supported clients through a wide range of challenges. One memorable example involved helping individuals on weight loss medication re-programme their eating habits, making the most of the reduced appetite phase to build balanced, nourishing routines that restored energy and vitality. In the same group, another client significantly lowered her cholesterol after being told by her GP she had just a few months to improve it before being prescribed statins. She embraced the guidance and made real progress, reporting back with pride. These kinds of outcomes show how powerful group coaching can be when it combines education, accountability, and shared motivation.

 

What kind of feedback have you received from clients or your community?

 

Highly positive feedback from individual and group coaching.

Example 1: Jo’s coaching was professional, informative, and deeply personalised. She helped me set realistic goals, improve my sleep and diet, and continued to support me even after our sessions ended. Her thoughtful approach and genuine care made all the difference.

Example 2: Jo made everything feel achievable—from simple nutrition tweaks to movement goals. She was easy to talk to, knowledgeable, and always went the extra mile to offer helpful, personalised advice. Her support kept me motivated and on track.

Example 3: Jo’s coaching felt like a true partnership. She listened without judgment, helped me set achievable goals, and offered advice that genuinely improved my quality of life. It was professional, empowering, and deeply effective.

 

What’s been the most unexpected or exciting part of your journey so far?

 

One of the most unexpected and exciting parts of my journey has been witnessing how simple dietary adjustments can dramatically improve digestive disorders that clients had resigned themselves to living with. Seeing someone go from feeling stuck and hopeless to empowered and symptom-free, just through targeted, sustainable changes, has been incredibly rewarding. It’s a powerful reminder of how transformative personalised nutrition can be.

 

What would you say to someone thinking about studying with IINH?

 

I’d say—just go for it! I’ve never looked back. I managed the training alongside a full-time job as a school Biology teacher and being a single mum, and I felt supported every step of the way. I really enjoyed the flipped learning style, which gave me the flexibility to study when it suited me. The lecturers were excellent at consolidating key concepts and fostering open discussions with peers. I now feel well-equipped for my career as a health coach and have embraced the challenge of setting up my own business with confidence and excitement.
