Ingredients
Keep it simple! Melon wedges
- 1 small watermelon
- Juice of 1-2 limes
Watermelon Pizzas
- 2-4 watermelon slices then cut into triangles
- 2 tbsp ricotta
- 2 tbsp Greek yoghurt
- Seasonal berries strawberries, raspberries, blueberries
- Juice of 1-2 limes
Watermelon and Raspberry Smoothie
- ½ small chilled watermelon, outer rind removed, cut into chunks
- 125 grams raspberries 1 small punnet
- Juice of 1-2 limes
Method
Keep it simple! Melon wedges
- Using a chopping board, first slice the watermelon and in half and then into thick slices – about 2cm. Then cut into small triangles and serve on a platter with a squeeze of lime juice.
- Watermelon Pizzas
- Arrange watermelon slices on a large platter. Mix the ricotta and yoghurt in a small bowl then dollop a spoonful of the mixture onto of each melon slice. Top with berries and a squeeze of lime juice.
Watermelon and Raspberry Smoothie
- Place the watermelon, raspberries and juice of lime in a blender, blitz till smooth.
- Pour the smoothie into a tall glass and serve immediately.

Maggie's Tips
- Purchase small to medium watermelon, it is easier to cut :-)
- Store watermelon in your fridge to keep it nice and chilled for serving.
