This recipe takes me straight back to my catering college days in Portrush, Co. Antrim, N.Ireland - just hanging out with college pals in cosy little cafés, spoon in hand, daydreaming about all the adventures that ahead of me and that everything was possible. This quick, healthy spin on a Knickerbocker Glory is a far cry from the E-number-laden versions I joyfully gobbled back then, but it brings a little of that old magic back with its fresh flavours and bright, feel-good vibes. Oh to be 18 again.

Ingredients

  • 400 g full-fat yoghurt or soya/coconut yoghurt
  • 1 tsp honey maple syrup or orchard apple syrup* Opt
  • 250 g raspberries
  • 100 g strawberries 4-5 large berries
  • 100 g blueberries
  • 50 g homemade granola or good-quality shop-bought version

Method

  • Gently blend or mash half the raspberries with half the strawberries. Stir in honey or syrup to taste, adjusting depending on how sweet your berries are.
  • To assemble: Layer the yoghurt, mashed berries, whole berries and granola into two tall glasses. Keep going till you reach the top - or beyond...it’s all about the wow factor! Great fun to make with the kids.

Maggie's Tips

  • When berries are out of season, frozen berries work just as well - just let them thaw and taste first as they can be a little more tart. Add a little honey or syrup to sweeten if needed.
  • Don’t get caught up with the weights and ingredients - play around with what you have!
  • Dairy Free/Vegan Option: Use dairy free yoghurt
