Overnight Oats with Manuka Honey, Creamy Yoghurt & Blackberries

Start your day off right with this luscious overnight oats recipe. These oats are infused with the rich sweetness of Manuka honey, paired with creamy yogurt, and topped with plump blackberries. A simple and satisfying breakfast that's ready to enjoy as soon as you wake up.

Ingredients

  • 100 g Jumbo oats
  • ½ level tsp cinnamon
  • Pinch salt
  • 1 tbsp golden linseeds flaxseeds
  • 300 ml water
  • 80 g blackberries small handful
  • 1-2 tsp Manuka honey
  • 2 tbsp Greek yoghurt opt*

Method

  • Mix oats, cinnamon, salt, linseeds, water and Manuka honey in a bowl. Cover and refrigerate overnight.
  • Next day, bring to room temperature, combine with the Greek yoghurt if using. Top with blackberries and an extra drizzle of Manuka. Enjoy!

Maggie's Tips

• I enjoy my oats made with water but if you want a creamier version use milk, nut milk or coconut milk.
• Vary toppings and flavours: blend in nut butters, or add stewed apple or rhubarb, or prunes
• Vary berries; add chopped nuts, dried fruits, vary spices: cardamom, cinnamon, nutmeg, turmeric, etc.
• Can be prepared 2-3 days in advance.
