Mini Frittatas with Smoked Trout, Avocado & Cottage Cheese

These mini frittatas are little bites of breakfast brilliance. Rich in protein, healthy fats, and omega-3s - they’re the kind of recipe that looks impressive, but couldn’t be simpler to make.  Filled with smoked trout, silky avocado, and a mix of tangy cottage cheese and Parmesan, they’re light yet satisfying. Perfect for that grab-and-go morning when you want something wholesome (and delicious). But equally wonderful in your lunchbox, or for brunch, lunch or dinner.

Ingredients

  • 6 eggs organic or free-range
  • 100 g cottage cheese or quark
  • 40 g Parmesan cheese finely grated
  • 2 spring onion finely chopped
  • 1 tbsp dill finely chopped
  • Seasoning of rock salt & freshly ground pepper
  • 1 small knob of butter /oil to grease muffin trays
  • 1 med avocado thinly sliced
  • 50 g smoked trout or salmon
  • *Muffin or cupcake tin

Method

  • Preheat oven to 150c (fan). In a mixing bowl, gently whisk together eggs, cottage cheese, Parmesan, spring onion, dill and a generous pinch of salt and pepper until smooth and creamy.
  • Lightly grease muffin tin with olive oil or butter to prevent sticking. Ladle the egg mixture evenly into the tins, filling them about halfway. Top each cup with avocado and trout, taking care not to overfill as the egg mixture will rise in the oven.
  • Bake for 15 - 20 minutes, or until the eggs are set and lightly golden on top. Let them cool slightly before popping out and enjoying!

Maggie's Tips

  • Great in a lunchbox or for breakfast on the run.
  • These keep for 3 - 4 days in the fridge, but are best eaten fresh on the day.
  • Vegetarian option: simply omit the trout.
  • Mini frittatas are perfect for using up leftovers - e.g. roasted vegetables, baked ham, any smoked fish or fresh salmon or trout, fresh herbs, or your favourite cheeses.
