Date, Orange & Almond Truffles

There is something deeply satisfying about making your own snacks, especially when they come together in minutes and taste this good. These truffles are rich with sticky Medjool dates, bright zesty citrus and the nutty crunch of almonds. They are everything I want from a treat: naturally sweet, a little zesty, and full of good-for-you ingredients.

Ingredients

  • 100 g whole almonds lightly chopped
  • 100 g Medjool dates pitted and roughly chopped
  • 25 g desiccated coconut
  • Zest of 1 orange
  • 2-4 tsp freshly squeezed orange juice

Method

  • Combine almonds, dates, coconut, and orange zest in a food processor. Pulse until it resembles finely chopped breadcrumbs. The mixture should be sticky when pressed between fingers. Add 2-4 teaspoons of orange juice to bind and pulse again in food processor. The mixture should be sticky but not too wet.
  • Shape into walnut size balls. Place in an airtight container and store in the fridge.

Maggie's Tips

  • If dates feel a little dry, soften by soaking in boiling water for 10 minutes. Drain and pat dry between sheets of kitchen paper, then follow above instructions.
  • Dates can be replaced with figs.
  • Almonds can be replaced with hazelnuts or walnuts or pecans.
  • Dairy free / Vegan friendly: Ensure chocolate is DF/Vegan friendly
  • Gluten free: Ensure chocolate is GF
