Beet-the-Blues Smoothie

Ingredients

  • 1 small beetroot diced small (cooked or raw x 100 grams)
  • 125 g blueberries
  • 1 large peach or apple 180g
  • 5-10 g ginger 1 knob
  • 1/8 tsp cinnamon good pinch
  • Juice 1 lime 10ml
  • 400 ml coconut milk
  • 100 ml water

Instructions

  • Blend all ingredients, pour into a glass, and enjoy!

Maggie's Tips

My preference is for freshly cooked beetroot. Vacuum packed is ok, too, but never use pickled beetroot in this recipe. You can also boil up a load of beetroot, freeze in individual zip-lock bags and use as required.
For a protein boost add nut butter, seeds, good quality protein powder, such as “Good Green Stuff ™”
