Instructions
Mix chia custard ingredients together in a bowl, whisking for a few minutes to prevent seeds from clumping. Set aside for ½ – 2 hours so chia seeds fully absorb the coconut milk, ideally in the fridge.
Lightly smash or crush berries of choice with back of a fork, leaving some whole.
Layer a little of the chia mixture in the bottom of 4 small glasses, followed by a few berries and a little granola. Repeat the process and finally garnish with fresh mint or any edible green leaf.

Great for breakfast or brunch or as a dessert.
Use seasonal fruits such as stewed rhubarb, caramelized apples, banana or pineapple, or peaches or plums.
