First Marination

  • 2 teaspoons of salt
  • 5 cm ginger peeled and grated
  • 4 cloves garlic, crushed to a paste
  • 2 tablespoons of malt or white rice vinegar

Second Marination

  • 3 tablespoons grated paneer or cottage cheese
  • 1 small egg, organic or free range if possible
  • 2 red chillies, seeded and finely diced
  • 1 tablespoon fresh coriander leaves, finely chopped
  • 1 tablespoon corn flour
  • 1 lightly rounded teaspoon turmeric
  • 100 ml single cream or Greek yoghurt or coconut milk
