  • 2-3 eggs
  • 20 grams cheddar cheese
  • 10 grams baby or young spinach leaves, shredded fine (dad’s job)
  • 2 cherry tomatoes, halved

  1. Break eggs into a bowl and season. Beat lightly and whisk in cheese, add cherry tomatoes and shredded spinach.
  2. Lightly oil a small muffin tin or ramekin dish, remove excess oil with kitchen paper and pour in egg mixture, cover lightly with parchment paper and tin foil
  3. Bake in oven until set and golden at 150 C for about 10-15 minutes.
