These scrumptious raw chocolate bars are packed full of goodness and are a great guilt free sweet treat. They are simple and quick to make and are suitable for anyone, including vegans, gluten frees, raw foodies. For lower GI or a diabetic friendly version use figs instead of dates and add in some good quality protein powder. You could also add in a few scoops of supergreens or some chia seeds for an extra nutrient punch.

Serves 6-8 persons


  • 100 grams Brazil nuts
  • 100 grams pitted medjool dates, chopped
  • 20 grams gogi berries
  • 20 grams bee pollen
  • 1 tablespoon raw cacao (7-8 grams)
  • Zest of ½ orange
  • Juice of ½ orange (2 tablespoons)
  • 10 grams quinoa puffs (optional)

  1. In a food processor pulse nuts quickly but do not over-process, as you want them a little crunchy. Transfer nuts to small bowl.
  2. In the same food processor bowl (no need to wash) wizz the chopped dates, gogi berries and raw cacao for 30 seconds, then add back the nuts with the orange zest and orange juice, wizz once more for 30 seconds, then add the bee pollen and quinoa puffs (if using) and whiz again until it becomes sticky.
  3. Transfer mixture onto a table. Using your fingers gently knead until combined. Place onto parchment paper and roll into a sausage shape using the paper. Place in the fridge overnight and next day cut into slices about 1cm thick.

  • Dust with raw cacao and store in an airtight container in the fridge.
