This tasty nutrient dense breakfast pot will bring a smile to your face and add a bounce to your step. Pack into a little ramekin jar and bring to work for a healthy lunch or serve as a healthy dessert. what a versatile little recipe this one is.

Serves 4 large or 10-12 small jars or pots. 

Breakfast Pot

  • 20 grams chia seeds (2 tablespoons)
  • 1/2 scoop Power Greens (mix with a little water to dissolve)
  • 3-4 teaspoons maple syrup
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon pure vanilla extract
  • 150 ml coconut milk
  • 200 ml nut milk

Toppings:

  • Seasonal fruits: ruby grapefruit, pomegranate, blood orange, crispy apple, seasonal berries.
  • Crunchy: toasted coconut chips, granola, chopped toasted nuts and seeds.

Method

  1. Whisk the green powder with a little water to dissolve. Mix this with the other breakfast pot ingredients in a bowl then whisk for a few minutes to prevent chia from clumping and to make sure that The Power Greens is evenly distributed. Set aside for 1½ – 2 hours for the chia seeds to fully absorb the milk.
  2. Lightly toast coconut chips on a dry pan until lightly golden.
  3.  Arrange fruit in layers in shot glasses or jars or bowls. Top with chia pudding and your favourite topping.
