Beetroot boosts immune function and helps prevent chronic diseases due to its abundance of vitamin C, potassium, folate, manganese and loads of other vitamins, minerals and antioxidants.  It is low GL (specially when raw), so it converts into sugar very slowly and helps keep blood sugar levels stable. It contains soluble fibre which helps reduce high blood cholesterol levels. The leafy parts of the plant are especially rich in calcium, beta-carotene and iron. The red pigment in beetroot is believed to contain certain anti-cancer agents, which is why it has been used in the alternative treatment of cancer for many years. It is used in traditional Chinese medicine to strengthen the blood.
Blueberries are not only delicious, but full of antioxidants that help regulate inflammation.
