This is a salad dressing I recently developed for Natural Life Magazine and a great way to add Udo’s Choice oil to your food. Remember – don’t use Udo’s as a cooking oil. This dressing is fantastic with roasted vegetables, meats, fish and hearty winter greens. Keep refrigerated up to 3 days.

Udo’s Choice oil provides a health-enhancing ideal blend of omega-3 and omega-6 essential fats.


  • 2 medium garlic cloves, crushed
  • 1 large tablespoon tahini
  • 1 tablespoon Udo’s Choice oil
  • 1 ½ tablespoon freshly squeezed lemon juice
  • 1 teaspoon honey
  • 50 ml water
  • 40 grams fresh herbs (basil, parsley, coriander, mint, oregano: any combination is good)
  • Sea salt to season
  • Crushed peppercorns to season

  1. Whisk together the garlic, tahini, Udo’s Choice Oil, lemon juice, honey & water in a bowl.
  2. You are aiming for a creamy, smooth texture. If it’s too thick, add more water and whisk some more.
  3. Stir in the chopped herbs and season to taste.
