Bacon and Cabbage Frittata paint

Nothing beats a sun-kissed, just-picked, juicy ripe tomato, especially one you grew yourself. Now in abundance and perfectly sweet they have to be one of summers simplest foodie pleasures. Stroll around your local farmers market and you are bound to come across several varieties, shapes and colours: red, purple, yellow, green, striped, black etc.

Tomatoes have excellent antioxidant content, including Vit C, beta-carotene, vitamin E and the mineral manganese, among many other nutrients.

This fantastic salad is so simple to make and delicious to eat on its own, best mopped up with fresh sourdough bread or toasted ciabatta.

Serves 2-4


  • 4-6 firm ripe heirloom tomatoes, sliced into 4 or 5 slices (vary colour and shape)
  • 100 grams heirloom cherry tomatoes, halved (vary colour and shape)
  • Small handful of oregano leaves or basil or marjoram or rocket
  • Sprinkling of super dukkah crumble
  • Good quality extra virgin olive oil
  • Seasoning: seasalt and cracked pink peppercorns
  • Gluten Free

  1. Cut the vine tomatoes into 4-5 slices and cherry tomatoes in half, arrange neatly on a salad platter.
  2. Drizzle over your favourite olive oil and sprinkle over super dukkah crumble and seasoning. Scatter over a few oregano leaves, edible flowers and finish with a light drizzle extra virgin olive oil.
