Summer’s here at last! What shall we coeliacs eat?

At this time of year, we start thinking about nice salad recipes. Many salads are gluten-free and easy to prepare. I’d love to share with you a lovely refreshing recipe that a very nice Russian lady gave me.

Ingredients

2 large carrots, peeled and grated
1 ounce of cheddar cheese, grated (less or more cheese can be used, and white cheddar can add a nice contrast if preferred)
1 clove of garlic, crushed
Small bunch of fresh basil leaves, roughly torn
Small squeeze of mayonnaise (gluten-free)

Method

In a bowl add the grated carrots and cheese and stir gently until well mixed. Add the crushed garlic and give a little stir. Tear the basil leaves and stir in gently. Finally, add a small amount of mayonnaise to bind the ingredients together.

Goes well with…

A nice tomato salad (e.g. tomato with mozzarella cheese, olive oil and basil).
Pine nut
salad (e.g. toasted pine nuts, avocado and salad leaves)
Any cooked meats

Hot Tip:

When purchasing mayonnaise or ketchup consider buying the squeeze bottles. While these may work out a little more expensive it avoids the risk of cross-contamination that can occur when using the jar versions.
