I think I am becoming addicted to hot chocolate – and this from someone who has never drunk it before in her life! As the long wintery evenings begin I decided to experiment with a few ‘hot choc’ recipes. This creamy, rich hot chocolate drink ticks all the right boxes – sheer indulgence, but also a mug of natural medicine for the soul.

I hope the warming and aromatic cardamom, cinnamon and orange, along with creamy coconut and rich cacao – ‘Food of the Gods’ and packed with antioxidants – presses your happy button, too! A mug to be hugged and enjoyed!

Serves 2

Ingredients 

  • 400 ml coconut milk
  • 200 ml nut milk or oat milk or full fat organic dairy (I like to make my own Brazil nut milk)
  • 3 tablespoons cacao powder
  • 2 cardamom pods, lightly bruised
  • ½ teaspoon cinnamon
  • 1 teaspoon bee pollen
  • 1 teaspoon vanilla extract
  • Zest of 1/2 orange
  • Juice of 1 orange
  • Maple syrup to sweeten

Method

  1. Combine coconut milk, nut (or other) milk, cacao, cardamom pods, cinnamon spice, bee pollen, vanilla extract, orange zest and juice in saucepan, bring to a simmer, then remove from heat and leave to infuse for 10 minutes.
  2. Gently bring back to a low simmer and add a little glug of maple syrup to sweeten, remove cardamom pods and pour into your favourite cup or mug. Hug and Enjoy!
