Bacon and Cabbage Frittata paint

Serves 6-8 

 

 

Ingredients

  • 250 grams courgette, peeled and roughly chopped
  • 5 grams garlic (1 large clove), chopped
  • 100 grams light tahini (4 tablespoons approx)
  • 2 tablespoon lemon juice
  • 1 tablespoon olive oil or MCT oil
  • 1 level teaspoon cumin (preferably freshly ground)
  • Seasoning
  • Extra olive oil for drizzling
  • Gluten Free

Method

  1. Place all ingredients in Magi-mix or Vitamix and blend to a smooth paste. Set aside 1-2 hours for flavours to infuse.
  2. To serve, transfer to a nice serving dish and drizzle with olive oil or MCT oil.
  3. Serve with raw vegetables, such as cucumber, carrots, salad leaves, cauliflower, broccoli, asparagus.
