This lovely breakfast bruschetta is the perfect way to start the day. Simple to put together, this makes for a super healthy breakfast or brunch or snack. The combination of sweet fruits really compliments the tangy creamy cottage cheese. Any combination of fruits are good, but for best results use whats in season and local and organic if possible.

Serves 2-4.

Ingredients

  • 2-4 large slices of your favourite sourdough, wholemeal or GF bread
  • 125 – 250 grams cottage cheese or fresh ricotta
  • 1-2 dessertspoons honey or maple syrup
  • 1-2 figs
  • 1-2 peaches or nectarines or plums
  • 200-400 grams mixed berries: strawberries, blueberries, raspberries etc
  • Small handful of grapes
  • 1-2 passion fruit
  • Vegetarian

Method

  1. Mix together cottage cheese and honey.
  2.  Cut figs in ¼, slice peaches and remove stone, cut large berries in ½, open passion fruit and scrape pulp into a little bowl, set aside.
  3. Toast or grill bread until golden. To serve: spoon ¼ or ½ cottage cheese mixture over each slice of bread. Top with mixed fruits and figs, then spoon a little passion fruit pulp on top with a drizzle of honey. Serve right away.
