Mothers Day reminds us to celebrate these amazing strong women of the world – our mothers. The earliest celebrations can be traced back to ancient Greece, in honour of Rhea, the Mother of the Gods. I’d like to share with you an extract from a poem I read recently, in honour of all our mums. It’s equally for those fortunate enough to still have their mother in their life – or not.

‘Your Mother lives inside your laughter. And she’s crystallized in every tear drop. She’s the place you came from, your first home, and she’s the map you follow with every step you take. She’s your first love, your first friend – even your first enemy – but nothing on earth can separate you. Not time, not space . . . . . not even death!’

Spoil your mum this Mothers Day!

Serves 2-4

Smashed Avocado on Sourdough with Vibrant Spring Salad

  • 1-2 ripe avocados
  • 1-2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon finely shredded fresh mint
  • 1 small handful freshly shredded baby spinach leaves
  • Sea salt and freshly cracked pepper to season
  • Selection of mum’s favourite vegetables: e.g. broccoli, radish, kohlrabi, cress, sunflower sprouts, baby salad leaves, edible flowers etc. (lightly blanch the vegetables or slice thinly where appropriate).
  • 1-2 slices of toasted sourdough bread per person
  • Vegetarian
  • Gluten Free: Use GF bread
  • Dairy Free
  • Diabetic Friendly: Go easy on the bread
  • Vegan

Method

  1. Use a fork to smash the avocado into a chunky paste. Gently mix in lemon juice, chopped mint, spinach and seasoning.
  2. Toast sourdough and spread with the avocado spinach mixture.
  3. Arrange mum’s favourite toppings on top of toast.
  4. Serve to mum with a big hug!
